I love these bowls!!! They are simple, easy to assemble, filling and delicious. As I’ve said before, meal prep doesn’t have to be bland or plain – it can be flavorful and healthy!
Here’s what I meal prepped this week for week 2 of LIIFT4.
Turkey Taco Bowls With Beans & Rice
Mexican Ground Turkey
Cook 1.5 pounds of lean ground turkey in a frying pan and mix with your favorite taco seasoning. I use Trader Joe’s taco seasoning.
Mexican Beans and Rice
I used this Instant pot beans and rice recipe (you can also make this in the crock pot!) which is simple and I had all the ingredients at home anyway! I doubled the recipe and had extra.
Steamed Broccoli and Sautéed Brussels Sprouts
You can add any veggie of choice but since my husband Mike came home from Costco with a big bag of brussels sprouts I sautéed these in olive oil and added them to our bowls.
Meal Prepping for LIIFT4
I’m on Plan B of LIIFT4 so I simply used the yellow container to dish out one serving of rice and beans, the red container for the turkey and the green container for the veggies. For Mike’s bowls I put two yellows of the beans and rice and added some roasted sweet potatoes I’d made that same night to eat with our dinner.
