Happy Friday! I just finished my lunch today and it reminded me that I had yet to share this week’s meal prep with you! Meal prep has been saving my life you guys! Knowing that I have a healthy meal waiting for me in the fridge that takes just a few minutes to heat up makes my life a lot easier.
Here’s what I made this week. The quinoa was a little more labor intensive but I made up for it with a simple protein and simple veggie.
Easy Meal Prep: Thai Cashew Quinoa, Chicken and Broccoli Bowls
1. Famous Crunchy Cashew Thai Quinoa Salad

I got this recipe from Ambitious Kitchen and it’s SO good. The ingredient list is pretty long but I already had most of it on hand so it wasn’t too overwhelming. And it didn’t take long to prepare at all (I bought the cabbage and carrots pre-shredded). This would also be a great healthy side dish to bring to a party or BBQ this summer.
2. Rotisserie Chicken
I’d prefer organic but we got ours at Costco. I simply shredded it and used some of it for a salad and the rest for these bowls.
3. Steamed Broccoli
Pretty much nothing easier than this!
Combine all three and save for later! For a vegetarian version you could easily just leave the chicken out or add tempeh or tofu. We actually ate one serving for dinner and I stored the other two servings. I gave Mike twice as much of the thai quinoa salad and extra chicken to make his more filling.
